- Remove the bone-in lamb leg roast from its packaging, allowing it to sit at room temperature for about 1 hour.
- Preheat your oven to 400°F (200°C). Create 1-inch-deep holes on the top side; make shallow cuts on the bottom.
- Drizzle olive oil over both sides, push the sliced garlic into the holes, and season with salt, pepper, rosemary, and sage.
- Place the roast fat-side down in a roasting pan and roast for 20 minutes at 400°F.
- Reduce the oven temperature to 350°F (175°C) and continue roasting for an additional 1.5 to 2.25 hours.
- Once done, remove from the oven and tent with foil; let it rest for at least 15 minutes before carving.
