Step-by-Step Instructions for Easy Lamb Roast
  1. Remove the bone-in lamb leg roast from its packaging, allowing it to sit at room temperature for about 1 hour.
  2. Preheat your oven to 400°F (200°C). Create 1-inch-deep holes on the top side; make shallow cuts on the bottom.
  3. Drizzle olive oil over both sides, push the sliced garlic into the holes, and season with salt, pepper, rosemary, and sage.
  4. Place the roast fat-side down in a roasting pan and roast for 20 minutes at 400°F.
  5. Reduce the oven temperature to 350°F (175°C) and continue roasting for an additional 1.5 to 2.25 hours.
  6. Once done, remove from the oven and tent with foil; let it rest for at least 15 minutes before carving.
