For the Chickpeas
  • 1 can Chickpeas drained and rinsed
  • 2 tablespoons Honey or agave syrup for vegan option
  • 2 tablespoons Sriracha adjust for spice preference
  • to taste Salt
  • to taste Black Pepper
  • 1/4 teaspoon Cayenne optional
  • 1/2 teaspoon Crushed Red Pepper optional
For the Base
  • 2 cups Cooked Brown Rice can substitute with quinoa
For the Vegetables
  • 1 cup Celery chopped
  • 1 cup Carrots sliced or grated
For Topping
  • 1/4 cup Ranch Dressing optional, or vegan ranch
  • 1/4 cup Cilantro chopped, optional

Method
 

Cooking Steps
  1. Heat 2 tablespoons of avocado oil in a skillet over medium heat.
  2. Add 2 minced garlic cloves and sauté for 1-2 minutes until fragrant and golden.
  3. Add 1 can of drained chickpeas to the skillet and stir for 3-4 minutes.
  4. In a mixing bowl, combine 2 tablespoons of honey, 2 tablespoons of sriracha, salt, and pepper. Whisk until smooth.
  5. Pour the sauce over the chickpeas, stir and simmer for 5-6 minutes until thickened.
  6. Remove from heat, serve over brown rice, and top with celery, carrots, ranch dressing, and cilantro.
