Method
 

Preparation Steps
  1. Chop the peaches, removing the pits but keeping the skin intact. Aim for about 2 cups of chopped fruit.
  2. In a medium saucepan, combine the chopped peaches, 2 cups of cold water, and sugar. Bring to a gentle boil over medium heat. Simmer for 5-7 minutes until peaches are soft.
  3. Remove from heat and let the mixture cool to room temperature for about 10 minutes. Chill in the refrigerator for 20-30 minutes.
  4. Strain the cooled peach mixture over a large bowl or pitcher to remove pulp and larger pieces.
  5. Stir in 1 cup of freshly squeezed lemon juice and 2 cups of cold water. Adjust sweetness and acidity to taste.
  6. Serve the lemonade over ice, garnished with mint leaves and peach slices.
