Jelly Mixture
  • 150 ml Fresh Lemon Juice opt for fresh, high-quality lemons
  • 1 tbsp Lemon Zest zest the same lemons used for juice
  • 100 g Granulated Sugar (for pectin) may substitute with another granulated sugar
  • 200 g Granulated Sugar (for cooking) use standard sugar for best results
  • 100 g Glucose Syrup corn syrup can be used as a substitute
  • 10 g Yellow Pectin use the recommended type for best outcome
  • 1 tbsp Fresh Lemon Juice (additional) adds a splash of flavor
Optional Coating
  • to taste Sanding Sugar can substitute with granulated sugar

Method
 

Preparation Steps
  1. Prepare your molds by lining a 14 cm (5.5 in) frame with plastic wrap or use silicone molds.
  2. In a small bowl, mix yellow pectin with 100 g of granulated sugar.
  3. In a medium saucepan, combine fresh lemon juice, lemon zest, and glucose syrup. Warm gently over medium heat.
  4. Once warm, whisk in the pectin-sugar blend until dissolved.
  5. Bring the mixture to a full boil, gradually adding 200 g of granulated sugar while stirring.
  6. Monitor the mixture with a thermometer until it reaches 107°C (224°F).
  7. Add a tablespoon of fresh lemon juice and stir well.
  8. Pour the hot mixture into prepared molds and strain if necessary.
  9. Allow to set at room temperature for at least 2 hours or overnight.
  10. Once set, unmold and cut into squares, rolling in sugar to coat.
  11. Store in an airtight container layered with parchment paper.
