Ingredients
  

For the Cake
  • 1 box Yellow Cake Mix 15.25 oz.
  • 1 cup Water room temperature
  • ½ cup Vegetable Oil or olive oil
  • 3 large Eggs binds the cake together
  • 8 Biscoff Cookies crumbled, extra for topping
For the Vanilla Pudding
  • 1 box Instant Vanilla Pudding Mix 5.1 oz.
  • 3 cups Milk 2% or whole
  • 2 tablespoons Biscoff Cookie Butter for flavor
For the Biscoff Buttercream
  • 1 cup Salted Butter room temperature
  • ½ cup Biscoff Cookie Butter adjust for strength
  • 2 cups Powdered Sugar add gradually
  • 1 teaspoon Vanilla Extract pure vanilla elevates flavor

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9 x 13-inch baking dish.
  2. In a large bowl, combine the yellow cake mix, water, vegetable oil, and eggs. Mix until smooth.
  3. Stir in crumbled Biscoff cookies and pour into the greased baking dish.
  4. Bake for 28-30 minutes or until a toothpick comes out clean.
  5. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely for 1 hour.
  6. Poke holes in the cooled cake with a wooden spoon handle, spaced 1 inch apart.
  7. In a bowl, whisk together milk, pudding mix, and cookie butter until thickened.
  8. Pour pudding mixture over the poked cake and cover with plastic wrap. Refrigerate for at least 2 hours or overnight.
  9. To make the frosting, beat butter and cookie butter together, then gradually add powdered sugar and vanilla.
  10. Frost the chilled cake with the Biscoff buttercream, covering the pudding layer completely.
  11. Crumble additional Biscoff cookies on top and refrigerate until ready to serve, for at least 30 minutes.
  12. Slice into squares and serve, optionally garnished with whipped cream and cookie crumbles.
  13. Store leftovers covered in the refrigerator for up to 3 days.

Notes
