Ingredients

For the Cake Layers
  • 8 oz Angel Food Cake Provides structure and lightness; feel free to make your own for even more flavor.
  • 8 oz Crushed Pineapple Enhances moisture and fruity flavor; ensure it's well-drained to avoid sogginess.
For the Pudding Mixture
  • 3.4 oz Instant Vanilla Pudding Mix Adds flavor and creaminess; can be replaced with a homemade version if desired.
  • 1.5 cups Cold Milk Necessary for reconstituting the pudding mix; any type of milk, including non-dairy options, works perfectly.
  • 1 cup Sour Cream Contributes tanginess and richness; Greek yogurt makes a great substitute.
  • 8 oz Whipped Topping Lightens the pudding mixture; you can use stabilized fresh whipped cream instead for a homemade touch.
For the Fruit Filling
  • 21 oz Cherry Pie Filling Adds sweetness and visual appeal; swap for strawberry, blueberry, or mixed berry filling for variations.
For the Topping
  • 0.5 cup Caramel Sauce Adds a layer of sweetness and depth; optional, but highly recommended for drizzling.
  • 0.25 cup Chopped Pecans Provides a crunchy texture contrast; replace with any preferred nut or omit for a nut-free option.

Equipment

  • 9x13 inch dish
  • Mixing Bowl
  • Spatula

Method

Step‑by‑Step Instructions
  1. In a large mixing bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until the mixture thickens and is smooth.
  2. Fold in the sour cream gently into the pudding mixture until well combined.
  3. Gently fold in the whipped topping into the pudding-sour cream mixture until it becomes light and airy.
  4. Spread half of the cubed angel food cake evenly across the bottom of a 9x13-inch dish.
  5. Spoon the drained crushed pineapple evenly over the cake layer.
  6. Spread half of the pudding mixture carefully over the pineapple layer, smoothing it out evenly.
  7. Place the remaining cubed angel food cake on top of the pudding layer, fitting the pieces together as before.
  8. Evenly spread the entire cherry pie filling over the top of the second cake layer.
  9. Spoon the remaining pudding mixture over the cherry layer, smoothing the top with a spatula.
  10. Drizzle caramel sauce over the top of the pudding layer, then sprinkle with chopped pecans.
  11. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  12. When ready to serve, cut the cake into squares using a sharp knife, wiping it clean between cuts.
