Method
 

Making the Salad
  1. Whisk together the dressing ingredients in a small bowl and set aside.
  2. Cook the chicken in boiling water until it reaches 165°F, then shred it.
  3. Toast the sesame seeds in a frying pan until golden and fragrant.
  4. Fry the rice noodles in hot oil until puffed and golden.
  5. Combine lettuce, chicken, green onions, and sesame seeds in a bowl.
  6. Pour dressing over the salad and toss gently.
  7. Top with crispy rice noodles just before serving.
