  3. Cook marinated chicken thighs on the grill for about 6-8 minutes per side, until internal temperature reaches 165°F. Let it rest for a few minutes.
  4. Slice the tops off the pineapples and hollow them out, leaving half an inch of fruit for stability. Chop the pineapple flesh into pieces.
  5. Slice the grilled chicken into strips, then fill the hollowed-out pineapples with chicken, diced bell peppers, and chopped pineapple.
