Ingredients

For the Kabobs
  • 1 lb Chicken Breast Boneless, skinless
  • 1/2 cup Teriyaki Sauce Gluten-free options available
  • 2 tbsp Dijon Mustard
  • 3 cloves Garlic Minced
  • 1 cup Fresh Pineapple Chunks
  • 1 cup Mushrooms Whole or halved
  • 1 each Red Bell Pepper
  • 1 each Onion (Red/White)
  • 2 each Green Onion Thinly sliced
Optional Garnish
  • 1 tbsp Sesame Seeds For sprinkling

Equipment

  • Grill
  • Skewers
  • Mixing Bowl
  • zip-top bag

Method

Step-by-Step Instructions
  1. Prepare the Marinade: In a small mixing bowl, whisk together teriyaki sauce, Dijon mustard, minced garlic, and sesame seeds until smooth.
  2. Marinate the Chicken: Place the chopped chicken breast into a zip-top bag or a shallow container. Pour the marinade over the chicken, seal the bag, and gently massage it to coat all pieces evenly. Refrigerate for at least 2 hours, or up to 24 hours.
  3. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes before grilling.
  4. Preheat the Grill: Preheat your grill to medium-high heat, around 400°F.
  5. Assemble the Kabobs: Alternate threading marinated chicken, fresh pineapple, red bell pepper, mushrooms, and onion onto each skewer.
  6. Grill the Kabobs: Place the assembled skewers on the preheated grill. Grill them for about 11-14 minutes, flipping every 3 minutes.
  7. Let Them Rest: After grilling, let kabobs rest for about 5 minutes.
  8. Garnish and Serve: Garnish with sliced green onions and sesame seeds if desired.
