- Prepare Marinade: In a sealable plastic bag, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Seal and massage until well blended.
- Marinate Lamb: Place the leg of lamb into the marinade bag, ensure it's well-coated, seal tightly, and refrigerate for at least 8 hours.
- Preheat Grill: Before grilling, preheat your grill to medium-high (around 375°F) and ensure grates are clean and well-oiled.
- Skewer Lamb: Remove the lamb from the marinade and discard excess. Skewer crosswise every 2 inches to maintain shape.
- Grill: Place skewered lamb on the grill, cover and grill for 8-14 minutes, checking for an internal temperature of 125–128°F for medium-rare.
