  • 1 cup Greek Yogurt or dairy-free yogurt for vegan option
  • 1/2 cup Honey or maple syrup for vegan option
  • 3 Eggs or flax eggs for vegan option
  • 1/2 cup Pistachios chopped
Crust
  • 1 1/2 cups Graham Cracker Crumbs or almond flour for gluten-free option
  • 1/2 cup Butter or coconut oil for dairy-free option

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Combine graham cracker crumbs and melted butter in a mixing bowl.
  3. Press the mixture into the bottom of a baking pan. Bake for 10 minutes.
  4. In a bowl, add softened cream cheese, Greek yogurt, honey, and eggs. Mix until smooth.
  5. Fold in the chopped pistachios.
  6. Pour the filling over the cooled crust and bake for 30 minutes.
  7. Cool for 30 minutes at room temperature, then refrigerate for at least 4 hours.
  8. Slice into bars and garnish with chopped pistachios or honey.
