- Begin by patting the cod dry with paper towels to ensure it's moisture-free, which helps the seasoning adhere perfectly. After drying, place the cod in a baking dish or on a clean surface, ready for seasoning.
- In a medium bowl, combine the gluten-free flour with ground coriander, paprika, ground cumin, salt, black pepper, and red pepper flakes. Mix well until all the spices are evenly distributed throughout the flour.
- In a separate bowl, whisk together the fresh lemon juice, olive oil, and melted butter until well combined. Stir in the minced garlic.
- Dip each piece of the dried cod into the lemon-garlic mixture, allowing any excess sauce to drip off. Once coated, dredge it in the flour-spice mix, pressing gently to ensure even coverage.
- Heat a tablespoon of olive oil in an oven-safe skillet over medium-high heat. Once hot, carefully place the coated cod in the skillet. Sear each piece for about 2 minutes on each side until golden brown.
