  1. Heat the Skillet: Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Cook the Potatoes: Add washed and halved baby potatoes to the hot skillet, season with salt, pepper, and paprika. Cook for about 15 minutes until golden brown and tender.
  3. Prepare the Steak: Cut sirloin steak into bite-sized cubes, season with salt, pepper, and dried herbs. In the skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter and let melt.
  4. Sear the Steak: Add steak cubes to the skillet in a single layer and sear for 2–3 minutes on each side until browned but juicy.
