- Preheat your oven to 375°F (190°C) and prepare a baking sheet by greasing it or lining it with parchment paper.
- In a large mixing bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, fresh parsley, minced garlic, egg, oregano, salt, and pepper. Mix until just combined.
- Pour the milk into the mixture and fold it in until soft and slightly sticky. Adjust the consistency with extra breadcrumbs or milk as needed.
- Divide the mixture into four equal portions and shape each into miniature loaves, about 4 inches long. Place them on the baking sheet.
- Drizzle the tops of each mini loaf with olive oil for a golden-brown color and enhanced flavor.
- Bake for 25–30 minutes until the internal temperature reaches 165°F (74°C).
- If using mozzarella cheese, sprinkle it atop the meatloaves during the last 5 minutes of baking.
- Remove the meatloaves from the oven and let them rest for about 5 minutes before serving.
