Equipment

Method

Step-by-Step Instructions
  1. Cut sirloin steak into bite-sized pieces. Mix with kosher salt, black pepper, smoked paprika, and garlic powder. Let sit for 5 minutes.
  2. Heat a skillet over medium-high heat, add olive oil and 2 tbsp butter. When butter is foamy, add steak bites in a single layer. Sear for 3 minutes, flip, and sear for another 3 minutes. Remove from skillet.
  3. Lower heat to medium, add remaining butter in the skillet. Once melted, add minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in beef broth, scraping the bottom of the skillet. Bring to a gentle simmer, stir in heavy cream and let simmer for 2 minutes.
  5. Whisk in grated Parmesan cheese until melted smoothly, return steak bites to skillet, coat with sauce, and cook for 1-2 minutes.
  6. Garnish with parsley and red pepper flakes. Serve over mashed potatoes, rice, or with crusty bread.

Notes

Pat steak dry before seasoning for a perfect crust. Monitor garlic closely while sautéing to avoid burning. Aim for medium-rare doneness with a meat thermometer. For a thicker sauce, simmer longer or add a cornstarch slurry.
