Ingredients

For the Mint Syrup
  • 4 cups Filtered Water Base for the syrup; ensure it’s clean for best flavor.
  • 1 cup Fresh Mint Leaves Infuses the syrup with a refreshing herbal note; substitute with fresh basil for a different flavor profile.
  • 1 cup Organic Cane Sugar Provides sweetness and balances the juice; honey can be used for a healthier option.
For the Juice
  • 3 cups Fresh Cubed Watermelon Main ingredient; gives sweetness and hydration, with seedless watermelon being preferable.
  • 1 whole Organic Cucumber Adds a light, refreshing crunch; use English cucumber for less bitterness or skip peeling if skin is thin.
  • 1 tablespoon Freshly-Squeezed Lemon Juice Enhances flavors with acidity; substitute with lime juice for a different zest.

Equipment

  • medium saucepan
  • Blender
  • Fine Mesh Strainer
  • Large pitcher

Method

Step-by-Step Instructions for Fresh Watermelon Cucumber Mint Juice
  1. In a medium saucepan, combine 4 cups of filtered water, 1 cup of fresh mint leaves, and 1 cup of organic cane sugar. Bring the mixture to a boil over medium-high heat, stirring constantly until the sugar dissolves, about 1-2 minutes. Once boiling, reduce heat and let it simmer for another 2-3 minutes, then remove from heat and allow to cool before straining out the mint.
  2. In your blender, add the cooled mint syrup, 3 cups of fresh cubed watermelon, 1 chopped organic cucumber, and 1 tablespoon of freshly-squeezed lemon juice. Blend on medium-high speed for about 2-3 minutes until the mixture is smooth and frothy.
  3. Pour the juice mixture through a fine-mesh strainer into a large pitcher to achieve a smoother texture.
  4. Chill the strained juice in the refrigerator for about 1-2 hours or serve immediately over ice, garnished with fresh mint leaves and watermelon chunks.
