Method
 

Dipping Sauce
  1. In a small bowl, whisk together low-sodium soy sauce, hoisin sauce, chili garlic sauce, coconut sugar, toasted sesame oil, and Chinese 5 spice until fully combined.
Cooking Filling
  1. Heat avocado oil in a skillet over medium-high heat. Add the chopped cremini mushrooms and sauté for 5-7 minutes.
  2. Gently add crumbled extra firm tofu, diced onion, and minced garlic to the skillet, cooking for another 5-7 minutes.
  3. Stir in sliced water chestnuts and grated carrots for added crunch. Cook for 2-3 minutes.
  4. Mix in minced ginger and cook for another minute until fragrant.
Assembly
  1. Lay out washed lettuce leaves. Scoop a portion of filling onto each leaf, fold the sides in, and roll tightly.
  2. Drizzle prepared dipping sauce over the rolls or serve on the side.
