Ingredients
  

For the Sandwich
  • 4 slices Crusty French Bread Can substitute with Italian loaf or sourdough
  • 4 slices Swiss Cheese Provolone or Gruyère can be used for flavor variations
  • 12 ounces Deli Roast Beef Leftover roast beef can also be used
  • 2 medium Yellow Onions Thinly sliced for caramelizing
  • 2 tablespoons Unsalted Butter For grilling
  • 1 tablespoon Olive Oil To help caramelize the onions
For the Au Jus
  • 2 cups Beef Broth Low-sodium is preferred
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Soy Sauce
  • 2 cloves Garlic Minced
  • 1 teaspoon Fresh Thyme Can use dried thyme if fresh isn't available
  • Salt To taste
  • Black Pepper To taste

Method
 

Step‑by‑Step Instructions
  1. In a large skillet over medium heat, melt 2 tablespoons of unsalted butter and 1 tablespoon of olive oil. Add 2 thinly sliced yellow onions, stirring frequently for 12-15 minutes until they turn golden and soft. Transfer them to a plate and set aside.
  2. In the same skillet, combine 2 cups of beef broth, 1 tablespoon of Worcestershire sauce, 1 tablespoon of soy sauce, 2 minced garlic cloves, and a few sprigs of fresh thyme. Simmer for about 5 minutes and season with salt and black pepper to taste.
  3. Lay out 4 slices of crusty French bread. For each sandwich, layer a slice of Swiss cheese, a generous portion of deli roast beef, half of the caramelized onions, and another slice of cheese. Top with another slice of bread.
  4. Spread a thin layer of unsalted butter on the outside of each sandwich.
  5. Preheat a skillet over medium heat and grill the sandwiches for 3-4 minutes on each side until golden brown and cheese melts.
  6. Slice each sandwich in half diagonally and serve immediately with the warm au jus on the side.

Notes

Wrap leftover sandwiches tightly for storage. Freezing ungrilled sandwiches is also an option.
