  • 1 pound boneless, skinless chicken breasts cut into 1 to 1.5-inch cubes
Vegetable Ingredients
  • 1 cup bell peppers cut into chunks
  • 1 cup onions cut into chunks
  • 1 cup zucchini sliced

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) or prepare your grill for medium-high heat.
  2. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Cut boneless, skinless chicken breasts into 1 to 1.5-inch cubes and add them to the marinade.
  4. Thread the marinated chicken onto skewers, alternating with colorful vegetables.
  5. Place the assembled kabobs onto your prepared baking sheet or grill them over direct heat.
  6. Cook for about 15-20 minutes, turning occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
