  • 1 tsp Cumin
  • 1 tsp Chili Powder adjust to preferred spice level

  • 8 Tortillas soft flour or corn; lightly fried
  • 2 cups Enchilada Sauce homemade or canned
  • 2 cups Shredded Cheese blend of cheddar and Monterey Jack; vegan cheese for dairy-free

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef and diced onions for 5-7 minutes until browned.
  3. Stir in minced garlic, cumin, and chili powder; cook for 1 minute until fragrant.
  4. Lightly fry tortillas for 30 seconds on each side to prevent sogginess.
  5. Spoon the beef mixture into each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  6. Pour enchilada sauce over the rolled enchiladas and sprinkle shredded cheese on top.
  7. Bake uncovered for 20-25 minutes until the cheese is bubbly and golden brown.
  8. Let cool for a few minutes before serving. Garnish with fresh cilantro or jalapeños if desired.
