  • 1 medium Onion Use yellow or sweet onion
  • 3 cloves Garlic Minced, fresh preferred
  • 28 oz Crushed Tomatoes Canned or fresh
  • 2 tbsp Tomato Paste
  • 4 cups Beef Broth Low-sodium recommended
  • 2 tbsp Italian Seasoning
  • 1 tsp Red Pepper Flakes Adjust to taste
  • 9 oz Lasagna Noodles Broken into smaller pieces
For the Cheesy Goodness
  • 15 oz Ricotta Cheese Can substitute with cottage cheese
  • 8 oz Mozzarella Cheese
  • 1/2 cup Parmesan Cheese
Optional Add-ins
  • 2 cups Fresh Spinach Stir in near the end
  • 1 cup Mushrooms Sauté before adding
  • 1/4 cup Balsamic Pickled Onions For garnish

Step-by-Step Instructions
  1. Prepare your ingredients by dicing the onion and mincing the garlic, and breaking lasagna noodles into smaller pieces.
  2. Combine ingredients in the crockpot: ground beef, diced onions, minced garlic, crushed tomatoes, tomato paste, beef broth, Italian seasoning, red pepper flakes, and broken lasagna noodles. Stir until well combined.
  3. Set the cooking temperature to low heat for 4-6 hours or high heat for 3 hours.
  4. About 10 minutes before serving, stir in the ricotta, mozzarella, and Parmesan cheeses. If using fresh spinach, fold it in now.
  5. Taste and adjust seasonings with salt and pepper. Serve hot, garnished with extra cheese or balsamic pickled onions.
