Ingredients

For the Casserole
  • 1 cup Long-Grain White Rice You can substitute with brown rice but increase cooking time by 10-15 minutes.
  • 2 cups Low-Sodium Chicken Broth Ensure the rice is fully submerged.
  • 1 pound Boneless, Skinless Chicken Breasts Feel free to use thighs for added juiciness.
  • 1 teaspoon Garlic Powder Fresh garlic can be used for a stronger flavor.
  • 1 teaspoon Onion Powder If using fresh onions, sauté them for better flavor.
  • 1 teaspoon Dried Oregano Fresh oregano can also be used in a smaller quantity.
  • 1 teaspoon Paprika Consider smoked paprika for richer flavor.
  • 1 cup Tzatziki Sauce Opt for store-bought or homemade.
  • 1/2 cup Crumbled Feta Cheese Can omit or swap with goat cheese.
  • 1/4 cup Fresh Parsley or Dill Use a Mediterranean herb blend as an alternative.
  • 1 medium Cucumber (optional) Radish can be used instead or omit.

Equipment

  • 9x13 inch baking dish

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. Spread uncooked long-grain white rice evenly across the bottom of the greased baking dish. Pour low-sodium chicken broth over the rice, ensuring it is submerged.
  3. Place the boneless, skinless chicken breasts on top of the rice. Sprinkle garlic powder, onion powder, oregano, and paprika generously over the chicken.
  4. Spoon tzatziki sauce over the seasoned chicken, smoothing it out evenly.
  5. Cover the baking dish tightly with aluminum foil. Bake for 35-40 minutes until the chicken is cooked through and the rice is tender.
  6. Remove the foil and return the casserole to the oven. Bake uncovered for an additional 5-10 minutes until the top is slightly crispy.
  7. Remove from the oven and allow to rest for 5 minutes before serving.
  8. Garnish with crumbled feta cheese, freshly chopped parsley or dill, and optional cucumber slices.
