Method
 

Step-by-Step Instructions
  1. Boil 4 medium diced potatoes in salted water for 10–15 minutes until fork-tender. Drain and set aside.
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add boiled potatoes and cook for 5–7 minutes until golden brown.
  3. If using, stir in ½ cup ham or bacon and cook for an additional 2–3 minutes.
  4. Whisk together 4 eggs, ½ cup milk, and salt and pepper in a bowl until well combined.
  5. Pour egg mixture over potatoes and meat. Cook on low heat for about 5 minutes, stirring gently until eggs are set.
  6. Sprinkle 1 cup shredded cheddar cheese on top, cover and cook for 2–3 minutes until cheese is melted.
  7. Remove from heat and top with chopped green onions or chives. Serve warm.
