- Preheat your oven to 350°F (175°C) and prepare a 9x5 inch loaf pan.
- Mash 2 to 3 ripe bananas in a large mixing bowl until smooth, then add 2 large eggs and 1 cup of cottage cheese, mixing until well combined.
- Add 1/3 cup of maple syrup and 1 teaspoon of vanilla extract to the banana mixture and stir gently.
- In another bowl, blend 2 cups of almond flour, 1 teaspoon of baking soda, and 1 teaspoon of cinnamon.
- Fold the dry ingredients into the wet banana mixture, mixing gently until just blended.
- Pour the batter into the prepared loaf pan, smoothing the top.
