Preparing Bang Bang Chicken Skewers
- In a medium bowl, whisk together mayonnaise, sweet chili sauce, sriracha, lime juice, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper until smooth and well combined.
- Cut the chicken breast into bite-sized pieces and add them to the marinade. Toss until each piece is evenly coated, then cover with plastic wrap and refrigerate for at least 1 hour.
- Preheat your grill to medium-high heat, aiming for around 400°F (200°C). Soak wooden skewers in water during this time.
- Once marinated, thread the chicken pieces onto skewers, leaving gaps between pieces for even cooking.
- Place skewers on the preheated grill and grill for 10 to 15 minutes, turning every 2 to 3 minutes.
- After grilling, let the skewers rest for 2 to 3 minutes before serving.
