- Shred 2 medium zucchinis using a box grater or food processor, then wring them in a towel to remove moisture.
- In a large mixing bowl, combine shredded zucchini, 1 cup of shredded cheddar, 1/2 cup of grated Parmesan, 2 eggs, and 3/4 cup of breadcrumbs, along with green onions, garlic, parsley, salt, and pepper.
