  • 2 medium Zucchini Shredded and excess liquid squeezed out
  • 1 cup Shredded Cheddar Cheese Or swap with mozzarella or pepper jack
  • 1/2 cup Grated Parmesan Cheese Can be replaced with any hard cheese like Pecorino
  • 2 large Eggs For binding the mixture
  • 3/4 cup Breadcrumbs Can use crushed crackers or gluten-free breadcrumbs
  • 4 stalks Green Onions Chopped
  • 2 cloves Garlic Minced
  • 2 tablespoons Fresh Parsley Chopped
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 tablespoon Cooking Spray/Oil For greasing the muffin tin

Step-by-Step Instructions
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray or oil.
  2. Shred 2 medium zucchinis using a box grater or food processor, then wring them in a towel to remove moisture.
  3. In a large mixing bowl, combine shredded zucchini, 1 cup of shredded cheddar, 1/2 cup of grated Parmesan, 2 eggs, and 3/4 cup of breadcrumbs, along with green onions, garlic, parsley, salt, and pepper.
  4. Spoon the mixture into the muffin tin, filling each cup about three-quarters full.
  5. Bake for 20 to 24 minutes until golden brown around the edges.
  6. Cool in the tin for 5 minutes before gently removing the bites and serving.
