  • 8 oz Orzo or gluten-free pasta
  • 4 cups Watermelon diced, preferably seedless
  • 1 cup Feta Cheese crumbled, can use low-fat or dairy-free
  • 1/4 cup Fresh Mint finely chopped, can substitute with basil
For the Dressing
  • 1/4 cup Olive Oil can use flavored oils
  • 2 tblsp Balsamic Vinegar red wine vinegar is an alternative
  • 1 tsp Salt to taste
  • 1/2 tsp Pepper freshly ground, to taste

Method
 

Preparation Steps
  1. Cook the orzo according to package instructions in salted water for about 8-10 minutes. Drain and rinse under cold water.
  2. In a large bowl, combine the cooled orzo, diced watermelon, crumbled feta cheese, and finely chopped mint. Fold gently.
  3. Whisk together olive oil, balsamic vinegar, salt, and pepper in a separate bowl until well combined.
  4. Pour the dressing over the salad mixture and gently toss until everything is evenly coated.
  5. Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Toss gently before serving and enjoy chilled.
