- Preheat your oven to 425°F (220°C). Peel the carrots and slice them into 1 to 1½-inch pieces.
- In a mixing bowl, whisk together honey, minced garlic, melted butter, olive oil, cinnamon, ground ginger, salt, and black pepper until smooth.
- Add the sliced carrots to the bowl and toss them gently until they are well-coated with the glaze.
- Spread the glazed carrots on a baking sheet lined with parchment paper and roast them for 20-25 minutes, tossing halfway through.
- Switch the oven to broil for the last 2-3 minutes until the carrots develop a caramelized exterior.
- Remove from the oven and transfer to a serving dish. Garnish with fresh herbs if desired and serve warm.
