  • 1 tablespoon Butter (or Ghee) Can swap for olive oil.
  • 2 tablespoons Olive Oil Melted coconut oil can be used instead.
For Seasoning
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoon Salt Sea salt recommended.
  • 1/4 teaspoon Black Pepper Freshly cracked preferred.
For Garnish (Optional)
  • 2 tablespoons Herbs (Parsley, Thyme) Fresh herbs for garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C). Peel the carrots and slice them into 1 to 1½-inch pieces.
  2. In a mixing bowl, whisk together honey, minced garlic, melted butter, olive oil, cinnamon, ground ginger, salt, and black pepper until smooth.
  3. Add the sliced carrots to the bowl and toss them gently until they are well-coated with the glaze.
  4. Spread the glazed carrots on a baking sheet lined with parchment paper and roast them for 20-25 minutes, tossing halfway through.
  5. Switch the oven to broil for the last 2-3 minutes until the carrots develop a caramelized exterior.
  6. Remove from the oven and transfer to a serving dish. Garnish with fresh herbs if desired and serve warm.
