- Season Chicken: Coat chicken breasts or thighs with salt, pepper, garlic powder, onion powder, and dried thyme. Let it sit for about 10 minutes.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6–7 minutes on each side until golden brown. Check internal temperature reaches 165°F (74°C). Transfer to a plate and cover.
- Boil Noodles: Boil salted water in a large pot. Cook egg noodles according to package instructions for 7–9 minutes until al dente. Reserve 1/2 cup pasta water, then drain noodles.
- Prepare Sauce: In the same skillet, lower heat and melt butter. Optionally add minced garlic and sauté for 1-2 minutes until fragrant.
- Combine: Slowly add reserved pasta water to melted butter, mixing well. Stir in drained egg noodles and season with salt and pepper.
- Plate: Serve buttery noodles on plates topped with sliced chicken and garnish with fresh parsley.
