Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, and chopped fresh parsley. Sprinkle in the ground cumin, ground coriander, salt, and black pepper. Mix thoroughly by hand for about 3-5 minutes.
  2. Wet your hands lightly and form the mixture into oval-shaped koftas, about 2 inches long. Ensure they are compact to avoid falling apart while grilling.
  3. Preheat the grill to medium-high heat. Lightly brush the grill grates with olive oil.
  4. Place the shaped koftas on the grill and cook for 10-12 minutes, turning occasionally until golden brown and the internal temperature reaches 165°F (74°C).
  5. While grilling, whisk together plain yogurt, lemon juice, and a pinch of salt until smooth and creamy.
  6. Serve the grilled koftas alongside the creamy garlic yogurt sauce for dipping.
