  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional) for thickening

Method
 

Step‑by‑Step Instructions
  1. In a medium saucepan, combine fresh blueberries, honey, and lemon juice over medium heat. Allow the mixture to simmer for about 5 minutes until the blueberries burst.
  2. In a large mixing bowl, add Greek yogurt and vanilla extract. Blend until smooth and adjust sweetness to taste.
  3. Spoon the creamy yogurt mixture into molds, filling each cavity about three-quarters full and smoothing the tops.
  4. Add a small spoonful of blueberry compote on top of each filled mold and swirl it gently to create a marbled effect.
  5. Place the molds in the freezer and allow the bites to freeze for at least 3 hours, or until solid.
  6. Once frozen, remove the bites from the molds and store them in an airtight container in the freezer for up to 3 months.
