Preparation Steps
- Preheat your oven to 350°F (175°C). Coat a 13x9 inch baking dish with vegetable spray.
- In a large mixing bowl, combine the Strawberry Cake Mix, Guava Juice, eggs, and melted Coconut Oil. Blend on medium speed until smooth, about 2-3 minutes.
- Pour the batter into the greased baking dish and bake for 24-26 minutes, until a toothpick inserted comes out clean.
- Cool the cake in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
- Beat the Cream Cheese until fluffy, then mix in the Granulated Sugar and Vanilla Extract. Fold in the Cool Whip and refrigerate.
- In a saucepan, combine Guava Juice and sugar, bring to a boil. Whisk together Cornstarch and Water to form a slurry, then add. Heat until thickened.
- Spread the cream cheese mixture over the cooled cake, then drizzle the Guava Gel on top.
- Refrigerate the assembled cake for at least 1 hour before serving.
