  • 1 box Strawberry Cake Mix Alternative: Use gluten-free cake mix for a gluten-free option.
  • 1 cup Guava Juice or Nectar Substitution: Other fruit juices (pineapple or mango) can also be used.
  • 3 large Eggs Can be substituted with unsweetened applesauce or a flax egg for egg-free variants.
  • 1/2 cup Coconut Oil Substitution: Vegetable oil can be used if necessary.
For the Cream Cheese Layer
  • 8 oz Cream Cheese For a dairy-free version, substitute with dairy-free cream cheese.
  • 1/2 cup Granulated Sugar Can reduce quantity for less sweetness.

For the Guava Gel
  • 2 tbsp Cornstarch Ensure it’s well mixed to prevent lumps.
  • 1/2 cup Water Essential for the gel-making process.
For Garnish
  • 1/4 cup Sweetened Coconut Flakes Optional, can be omitted for less sweetness.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Coat a 13x9 inch baking dish with vegetable spray.
  2. In a large mixing bowl, combine the Strawberry Cake Mix, Guava Juice, eggs, and melted Coconut Oil. Blend on medium speed until smooth, about 2-3 minutes.
  3. Pour the batter into the greased baking dish and bake for 24-26 minutes, until a toothpick inserted comes out clean.
  4. Cool the cake in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  5. Beat the Cream Cheese until fluffy, then mix in the Granulated Sugar and Vanilla Extract. Fold in the Cool Whip and refrigerate.
  6. In a saucepan, combine Guava Juice and sugar, bring to a boil. Whisk together Cornstarch and Water to form a slurry, then add. Heat until thickened.
  7. Spread the cream cheese mixture over the cooled cake, then drizzle the Guava Gel on top.
  8. Refrigerate the assembled cake for at least 1 hour before serving.
