Method
 

Step-by-Step Instructions
  1. Sift together T65 flour, cocoa powder, and powdered sugar in a mixing bowl.
  2. Cut cold semi-salted butter into small cubes and mix with the dry ingredients until crumbly.
  3. Add egg yolks and vanilla extract to the mixture and stir until a soft dough forms.
  4. Shape the dough into a rectangle, wrap in plastic, and chill for at least 30 minutes.
  5. Preheat oven to 180°C (350°F) while the dough chills.
  6. Slice chilled dough into thin sticks and arrange on a parchment-lined baking sheet.
  7. Bake the sticks for about 12 minutes until golden brown.
  8. Melt dark chocolate over a double boiler or in short intervals in the microwave.
  9. Dip each cooled stick into the melted chocolate and place back on the baking sheet.
  10. Let the chocolate set at room temperature before serving.
