- Sift together T65 flour, cocoa powder, and powdered sugar in a mixing bowl.
- Cut cold semi-salted butter into small cubes and mix with the dry ingredients until crumbly.
- Add egg yolks and vanilla extract to the mixture and stir until a soft dough forms.
- Shape the dough into a rectangle, wrap in plastic, and chill for at least 30 minutes.
- Preheat oven to 180°C (350°F) while the dough chills.
- Slice chilled dough into thin sticks and arrange on a parchment-lined baking sheet.
- Bake the sticks for about 12 minutes until golden brown.
- Melt dark chocolate over a double boiler or in short intervals in the microwave.
- Dip each cooled stick into the melted chocolate and place back on the baking sheet.
