- Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining the bottom with parchment paper and greasing the sides.
- Melt ½ cup of unsalted butter in a saucepan over medium heat, then add ⅓ cup of natural cocoa powder and mix until smooth. Cool slightly.
- Mash 2 to 3 ripe bananas in a large mixing bowl until smooth, yielding about 1 cup of mashed bananas.
- Add the cooled butter-cocoa mixture, ½ cup light brown sugar, ½ cup sour cream, 1 large beaten egg, 1 teaspoon vanilla extract, ½ teaspoon salt, and 1 teaspoon baking soda. Whisk until creamy.
- Gently fold in 1 cup of all-purpose flour, and then stir in 1 cup bittersweet chocolate chips without overmixing.
- Pour the batter into the prepared loaf pan and optionally sprinkle an additional ⅓ cup of chocolate chips on top.
- Bake at 350°F for 50 minutes, then reduce to 325°F and bake for an additional 10 minutes.
- Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely for at least 60 minutes.
