Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by lining the bottom with parchment paper and greasing the sides.
  2. Melt ½ cup of unsalted butter in a saucepan over medium heat, then add ⅓ cup of natural cocoa powder and mix until smooth. Cool slightly.
  3. Mash 2 to 3 ripe bananas in a large mixing bowl until smooth, yielding about 1 cup of mashed bananas.
  4. Add the cooled butter-cocoa mixture, ½ cup light brown sugar, ½ cup sour cream, 1 large beaten egg, 1 teaspoon vanilla extract, ½ teaspoon salt, and 1 teaspoon baking soda. Whisk until creamy.
  5. Gently fold in 1 cup of all-purpose flour, and then stir in 1 cup bittersweet chocolate chips without overmixing.
  6. Pour the batter into the prepared loaf pan and optionally sprinkle an additional ⅓ cup of chocolate chips on top.
  7. Bake at 350°F for 50 minutes, then reduce to 325°F and bake for an additional 10 minutes.
