  • 1 lb Fresh Shrimp Peeled and deveined
  • 1 cup Breadcrumbs Substitute with panko for extra crunch
  • 2 Eggs Room temperature
  • 3 stalks Green Onions Finely sliced
  • 2 tbsp Lemon Juice Freshly squeezed
  • 1 tbsp Lemon Zest From organic lemons
  • to taste Salt
  • to taste Pepper
For the Lemon Aioli
  • 1 cup Mayonnaise Greek yogurt can be used
  • 2 cloves Garlic Minced

Method
 

Steps
  1. Peel and devein fresh shrimp, then chop into small pieces. Set aside.
  2. In a bowl, mix chopped shrimp with breadcrumbs, eggs, green onions, lemon juice, zest, salt, and pepper until just combined.
  3. Shape the mixture into patties about 1 inch thick and place on a parchment-lined baking sheet.
  4. Heat olive oil in a skillet over medium heat and fry patties for 4 minutes on each side until golden brown.
  5. For aioli, whisk together mayonnaise, garlic, lemon juice, salt, and pepper until smooth.
  6. Serve shrimp cakes warm drizzled with lemon aioli.
