Step-by-Step Instructions for Crispy Mashed Potato Fries
  1. Begin by peeling and cutting about four medium russet or Yukon gold potatoes into uniform cubes. Place them in a pot of salted water and bring to a boil over medium-high heat. Allow the potatoes to cook for approximately 15 minutes or until they’re fork-tender.
  2. Once the potatoes are cooked, carefully drain them in a colander and return them to the pot. Mash the potatoes until they are completely smooth and free of lumps.
  3. Mix in salt, freshly ground black pepper, grated Parmesan cheese, chopped parsley, and potato starch.
  4. Divide the mashed potato mixture into two equal portions, rolling each into a ball. On a floured surface, flatten each ball into a rectangle about ½-inch thick. Cut the rectangles into strips to create fries.
