Step-by-Step Instructions for Crispy Mashed Potato Fries
- Begin by peeling and cutting about four medium russet or Yukon gold potatoes into uniform cubes. Place them in a pot of salted water and bring to a boil over medium-high heat. Allow the potatoes to cook for approximately 15 minutes or until they’re fork-tender.
- Once the potatoes are cooked, carefully drain them in a colander and return them to the pot. Mash the potatoes until they are completely smooth and free of lumps.
- Mix in salt, freshly ground black pepper, grated Parmesan cheese, chopped parsley, and potato starch.
- Divide the mashed potato mixture into two equal portions, rolling each into a ball. On a floured surface, flatten each ball into a rectangle about ½-inch thick. Cut the rectangles into strips to create fries.
- In a deep skillet, heat oil to approximately 350°F (175°C). Carefully add the potato strips in batches and fry them for 5-7 minutes until golden brown and crispy.
- Serve the crispy mashed potato fries hot with an optional sprinkle of additional Parmesan cheese or your favorite dipping sauces.
