  • 0.5 cup Parmesan Cheese Grated, or use nutritional yeast

Method
 

Directions
  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8–10 minutes. Drain without rinsing.
  2. Sauté the Mushrooms: Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and sauté for 5–7 minutes until golden brown.
  3. Add the Garlic: Stir in minced garlic and cook for 1 minute until fragrant, being careful not to burn.
  4. Incorporate the Spinach: Toss in fresh spinach and cook for an additional 2–3 minutes until wilted.
  5. Create the Sauce: Pour in heavy cream and simmer for about 3 minutes. Stir in grated Parmesan cheese until melted.
  6. Combine Pasta and Sauce: Add drained pasta and toss until well coated. Cook for 1–2 minutes over low heat.
  7. Season and Serve: Season to taste with salt and pepper. Serve warm, optionally garnished with basil or extra Parmesan.
