Step-by-Step Instructions for Roasted Sweet Potato Hummus
  1. Preheat a heavy cast-iron skillet over low heat. Add 1 teaspoon of olive oil and warm for about 2 minutes.
  2. Add the sweet potato cubes to the skillet and roast for 10-15 minutes, stirring occasionally.
  3. In a food processor, combine the roasted sweet potatoes, cooked chickpeas, tahini, garlic, fresh lemon juice, cumin, salt, and pepper. Blend until thick and chunky.
  4. Gradually add the reserved chickpea liquid, pulsing until you achieve desired creaminess.
  5. Slowly drizzle in the remaining olive oil and blend for an additional 30 seconds.
