Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper.
  2. In a mixing bowl, combine flour, ½ cup sugar, and melted butter. Mix until crumbly. Set aside 1 cup for topping.
  3. Press the remaining crumb mixture into the bottom of the baking pan evenly.
  4. In another bowl, toss diced rhubarb with 2 tablespoons of sugar and spread over the crust.
  5. Beat the softened cream cheese until smooth, then add ½ cup sugar, eggs, vanilla, and sour cream. Mix until creamy.
  6. Pour the cream cheese mixture over the rhubarb and spread evenly.
  7. Sprinkle the reserved crumb mixture over the cream cheese layer evenly.
  8. Bake for 45-50 minutes until edges are golden and the center has a slight jiggle.
  9. Cool completely in the pan then refrigerate for at least 2 hours before slicing.
