- Preheat your oven to 350°F (175°C) and line a 9x13-inch baking dish with parchment paper.
- In a mixing bowl, combine flour, ½ cup sugar, and melted butter. Mix until crumbly. Set aside 1 cup for topping.
- Press the remaining crumb mixture into the bottom of the baking pan evenly.
- In another bowl, toss diced rhubarb with 2 tablespoons of sugar and spread over the crust.
- Beat the softened cream cheese until smooth, then add ½ cup sugar, eggs, vanilla, and sour cream. Mix until creamy.
- Pour the cream cheese mixture over the rhubarb and spread evenly.
- Sprinkle the reserved crumb mixture over the cream cheese layer evenly.
- Bake for 45-50 minutes until edges are golden and the center has a slight jiggle.
- Cool completely in the pan then refrigerate for at least 2 hours before slicing.
