- Bring a large pot of salted water to a boil. Cook spaghetti until al dente, about 8–10 minutes, then drain.
- Heat olive oil in a skillet over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper. Cook chicken for 5–7 minutes per side until golden brown. Transfer to a plate.
- Melt butter in the skillet over medium-low heat. Add onion and sauté for 3–4 minutes. Stir in garlic and cook for 30 seconds.
- Add chicken broth and heavy cream to skillet, simmer for about 5 minutes until thickened. Return chicken and spaghetti, mixing to coat in sauce.
- Sprinkle Monterey Jack cheese over the mixture, cover, and let cook for 2–3 minutes until cheese melts.
