For the Creamy Dressing
  • 1 cup mayonnaise or dairy-free mayo
  • 0.5 cup sour cream or dairy-free sour cream
  • 1 tablespoon fresh lime juice freshly squeezed
  • 1 tablespoon taco seasoning to taste
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper
  • 1 cup cheddar cheese shredded, optional

Step-by-Step Instructions
  1. Bring a large pot of salted water to a rolling boil over high heat. Add macaroni and cook for 8-10 minutes until tender. Drain and rinse under cold water.
  2. In a medium bowl, whisk together mayonnaise, sour cream, lime juice, taco seasoning, salt, and black pepper until smooth.
  3. In a large bowl, combine cooled macaroni, black beans, sweet corn, diced bell peppers, red onion, and cheddar cheese. Fold together gently.
  4. Pour the dressing over the salad and stir until all ingredients are coated. Allow flavors to meld.
