  • 4 cups iceberg lettuce chopped into bite-sized pieces
  • 1 cup cherry tomatoes halved
  • ¼ cup red onion thinly sliced
  • ½ cup banana peppers or peperoncini chopped
  • 1 cup deli meat (turkey and salami) chopped
  • 1 cup cheese (parmesan, mozzarella, or cheddar) grated or cubed
For the Dressing
  • 1 cup mayonnaise or Greek yogurt
  • 2 tablespoons red wine vinegar or apple cider vinegar
  • to taste teaspoon salt
  • ½ teaspoon red pepper flakes or omit for milder
  • 1 tablespoon Italian seasonings or fresh herbs
  • 1 teaspoon oregano or thyme as a substitute

Method
 

Directions
  1. In a large mixing bowl, whisk together mayonnaise, red wine vinegar, and a pinch of salt to taste. Add red pepper flakes and Italian seasonings, along with oregano. Whisk for about 1 minute until creamy and well-combined.
  2. Chop iceberg lettuce and add to the bowl with the dressing. Halve cherry tomatoes, slice red onion, and chop banana peppers. Combine all with the dressing.
  3. Incorporate chopped turkey and salami into the bowl, then add grated or cubed cheese. Gently fold together.
  4. Toss the salad with tongs or a large spoon until evenly coated in the dressing. Serve immediately or refrigerate for 30 minutes to meld flavors.
