  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the sliced chicken sausage and cook for 3-5 minutes until golden brown. Remove sausage and set aside.
  2. In the same skillet, add chopped onion and a pinch of salt. Sauté for 2-3 minutes until translucent. Stir in minced garlic and cook for an additional 30 seconds.
  3. Pour in 1 cup of orzo pasta, stirring to coat with the onion and garlic mixture. Toast orzo for about 1 minute.
  4. Gradually pour in 3 cups of chicken broth, adding thyme, paprika, salt, and pepper. Bring to a gentle simmer and cook for 8-10 minutes until orzo absorbs most of the liquid.
  5. Reduce heat to low, stir in 1 cup heavy cream and 1 cup shredded cheese until melted. Return chicken sausage to skillet along with optional add-ins.
  6. Remove from heat and let sit for a few minutes to thicken. Garnish with parsley, extra cheese, and lemon zest. Serve warm.
