  • 1 tsp Salt adjust to taste
  • 1 tsp Black Pepper adjust to taste
For the Sauce
  • 1 can Diced Tomatoes or use fresh tomatoes
  • 2 cups Chicken Broth vegetable broth can be used
  • 1 cup Heavy Cream or substitute with coconut milk
  • 1/2 cup Parmesan Cheese consider nutritional yeast for vegan option
For the Pasta
  • 12 oz Penne Pasta or any pasta shape of choice
For the Vegetables
  • 1 bell pepper Bell Pepper any variety can be used
  • 1 medium Onion can use shallots or leeks
  • 2 cloves Garlic fresh, or substitute with garlic powder
  • 2 tbsp Fresh Parsley optional, for garnish

Method
 

Step-by-Step Instructions
  1. Drizzle chicken breasts with olive oil and coat well. Sprinkle with Cajun seasoning and other spices.
  2. Sear chicken in a hot skillet for 2-3 minutes on each side and transfer to slow cooker.
  3. Layer sliced bell peppers, diced onion, and minced garlic over chicken in slow cooker.
  4. Pour in diced tomatoes and chicken broth, ensuring ingredients are submerged.
  5. Set slow cooker to low for 4-5 hours or high for 2-3 hours until chicken is tender.
  6. Remove chicken, shred it, and return to slow cooker.
  7. Stir in heavy cream and Parmesan cheese until melted and combined.
  8. Prepare penne pasta according to package instructions, then drain.
  9. Add pasta to slow cooker, stir until coated with sauce, and heat for 15-20 minutes on low.
  10. Serve hot, garnished with fresh parsley.
