  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 6 cups Vegetable Broth Low-sodium
  • 2 medium Carrots Sliced
  • 1 medium Potato Diced
  • 2 tablespoons Fresh Lemon Juice Use freshly squeezed
  • 2 tablespoons Fresh Dill Chopped
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Olive Oil For sautéing

Instructions
  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped green cabbage, sliced carrots, and diced potato. Stir and cook for about 5 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15 minutes.
  6. Stir in the lemon juice and chopped dill. Season with salt and pepper. Simmer for another 5 minutes.
  7. Ladle the soup into bowls and serve warm, garnished with dill or a lemon wedge.
