Step-by-Step Instructions
  1. Place the boneless skinless chicken breasts at the bottom of your crockpot. Generously season them with salt, pepper, cumin, oregano, chili powder, and cayenne pepper.
  2. Layer diced onion, minced garlic, Great Northern beans, diced green chiles, and corn on top of the seasoned chicken. Pour in the chicken broth, ensuring everything is submerged, then gently stir to combine.
  3. Cover the crockpot and set it to cook on LOW for 8 hours or HIGH for 3 to 4 hours.
  4. Once cooking time is completed, carefully remove the chicken breasts from the crockpot and shred them into bite-sized pieces.
  5. Stir in the cream cheese and half-and-half. Cover and cook on HIGH for an additional 15 minutes.
  6. Ladle the soup into bowls and garnish with cilantro, cheese, or avocado.
