For the Pasta
  • 3 cups elbow macaroni can substitute with rotini or small shells
For the Creamy Dressing
  • 1 cup mayonnaise can use dairy-free mayo
  • 1/2 cup sour cream can use dairy-free sour cream
  • 1 each fresh lime juice fresh is best
  • 2 tablespoons taco seasoning adjust to heat preference

  • to taste black pepper
For the Salad Mix
  • 1 can black beans rinsed
  • 1 cup sweet corn can use frozen corn after thawing
  • 1 each red bell pepper diced
  • 1 each green bell pepper diced
  • 1/2 cup red onion chopped
  • 1 cup shredded cheddar cheese can use dairy-free cheese
  • to taste cilantro omit if preferred

Method
 

Preparation Steps
  1. Boil the Pasta: Bring a large pot of salted water to a rolling boil. Add elbow macaroni and cook for 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the Dressing: In a bowl, whisk together mayonnaise, sour cream, lime juice, taco seasoning, salt, and pepper.
  3. Combine the Salad Ingredients: In a large bowl, mix cooled macaroni, black beans, sweet corn, diced peppers, red onion, cheddar cheese, and cilantro.
  4. Mix the Dressing with the Salad: Pour dressing over salad mix and fold gently to combine.
  5. Chill Before Serving: Cover and refrigerate for at least 1 hour to meld flavors.
  6. Stir and Serve: Before serving, stir gently and adjust with mayo or lime juice if needed.
