Step‑by‑Step Instructions
  1. Season the chicken breasts with salt, pepper, and spices. Heat oil in a skillet, then sauté the chicken for 5-7 minutes until golden brown.
  2. Reduce heat and add chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is soft.
  3. Add coconut milk, jasmine or basmati rice, and any optional vegetables. Stir and simmer for 2-3 minutes.
  4. Cover and reduce the heat to low, letting it simmer for 15-20 minutes until the rice is tender.
  5. Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork before serving.
