Ingredients
  

Chimichurri Sauce
  • 1 bunch Fresh Parsley Flat-leaf preferred
  • 1 bunch Fresh Cilantro
  • 3 cloves Garlic Fresh for optimal flavor
  • 2 tablespoons Red Wine Vinegar Can substitute with balsamic vinegar
  • 1/2 cup Extra Virgin Olive Oil
  • 1 teaspoon Dried Oregano
  • 1 pinch Red Pepper Flakes Adjust to taste

Salad
  • 1 pound Sirloin Steak Or Flank/Skirt
  • 4 cups Mixed Salad Greens Spring mix or romaine
  • 1 cup Cherry Tomatoes Halved
  • 1 cup Cucumber Chopped
  • 1 small Red Onion Thinly sliced
  • 1 medium Avocado Added before serving
  • 1 cup Cooked Corn Fresh, frozen, or canned
  • 1 cup Black Beans Rinse if using canned

Method
 

Chimichurri Sauce Preparation
  1. In a food processor, combine parsley, cilantro, garlic, red wine vinegar, dried oregano, and red pepper flakes. Season with salt and black pepper. Pulse until finely chopped, then gradually add olive oil while blending until well mixed.
Steak Cooking
  1. Season both sides of the sirloin steak with salt and black pepper. Heat a skillet over medium-high heat with olive oil. Cook the steak for about 3-5 minutes per side for medium-rare.
Assembling the Salad
  1. In a large bowl, combine mixed greens, halved cherry tomatoes, chopped cucumber, sliced red onion, diced avocado, cooked corn, and black beans. Toss gently.
  2. After the steak has rested, slice it against the grain into thin strips and place on top of the salad. Drizzle with chimichurri sauce before serving.
