For the Pasta
  • 8 oz Mafalde corta or lasagnette pasta or your favorite short pasta shape
For the Dressing
  • 1/4 cup Extra virgin olive oil light olive oil works well
  • 1/4 cup White wine vinegar or apple cider vinegar
  • 6 cloves Garlic minced
  • 1/2 tbsp Dried oregano or fresh oregano
  • Salt to taste
  • Pepper to taste
For the Salad
  • 2 pints Cherry tomatoes halved or quartered
  • 1 cup Mozzarella pearls or feta for a tangy twist
  • 1/3 cup Basil chiffonade fresh basil is key
  • 1 cup Toasted sourdough croutons or any crusty bread
  • 1 cup Parmigiano Reggiano grated
For the Finish
  • Balsamic glaze for drizzling

Method
 

Step-by-Step Instructions
  1. Bring salted water to a boil and cook pasta until al dente, about 8-10 minutes. Drain and cool.
  2. Tear sourdough bread into pieces, sauté in olive oil and salt until golden brown.
  3. Sauté minced garlic in olive oil over low heat until fragrant, about 1-2 minutes.
  4. Combine marinated tomatoes ingredients (tomatoes, vinegar, oregano, salt, and pepper) with garlic mixture and marinate for 30 minutes.
  5. In a bowl, combine cooled pasta, marinated tomatoes, mozzarella, basil, croutons, and Parmesan. Toss gently.
  6. Serve salad on a platter, drizzled with balsamic glaze and topped with remaining croutons and Parmesan.
